You can also make Kadai chicken (dry stir fry) or Chicken pulao. Serve it with mango chutney or cucumber raita on the side.

Stir fry onions, ginger & garlic. Add your salt & spices. Add the chicken and stir fry. Add the potatoes (carrots, baby corn, snow peas....). Stir fry until well cooked. Garnish with some fresh lemon juice and cilantro. Serve with rice. You can add the rice into the dish and make a chicken & veggie pulao.

u can make shambar/curry or biryani, or some gravy

Chicken Curry with mango chutney and cucumber on the side:

Pat chicken dry and sprinkle with 1/2 teaspoon salt.

Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken, turning over once, about 5 minutes total. Transfer chicken with tongs to a plate. Stir onion, garlic, curry, corriander into skillet, then tomatoes with their juice, and 1/2 teaspoon salt and bring to a simmer. Add chicken and cook partially covered, until chicken is cooked through, 15 to 20 minutes.

I'd do as C E suggest but maybe microwave your potatoes till 1/2 cooked and add to your mix . Add a few peas too . Cauliflower is good also I'd even think of substituting the tomatoes with coconut milk .
