GREEK SALAD FROM CRETE

1 green pepper, deseeded, sliced in rings
1 red onion, finely sliced
1 medium cucumber, sliced
3 medium or 2 large ripe tomatoes, cut in thin wedges
2 oz (handful) ripe (black) kalamata olives, pitted
6 or 7 oz slice of feta cheese
1/2 fresh lemon or juice
extra virgin olive oil (greek from Crete, if available)
fresh oregano or thyme leaves
salt and pepper

In a large flat salad dish, or plate combine sliced vegtables with olives and tomato wedges. Lay slice of feta on top and drizzle with olive oil, squeeeze lemon over that and sprinkle with oregano or thyme and salt and pepper. Alternately, the feta can be cubed or crumbled.
In Crete, the salad is often accompanied by an Italian or French type baton of bread which is used to mop up the leftover olive oil.

Mediteranean bagged salad blend (it's just easier)
jarred kalamata olives (preferrably marinated)
original feta cheese, crumbled
pepperoccini (light green spicy peppers)
jarred roasted peppers
thinly sliced red onion
a good greek dressing (Ken's is fantastic)

Don't forget the pita bread!

All that is great, but I find it a little bit overwhelming, meaning its just tooooo bussy.
Try this one:
Cubed choped tomatoes
Cubed choped cucumbers
Cubed cheese
Yellow or Red Pepper
Black Olives
Dressed with Olive Oil, and you could add feta cheese ( gives that nice salty cheesy punch to it)

This one should do the trick :)

I was born in Greece and the way I have always made it at home and mom and grandma always made it is as follows:

INGREDIENTS

3 – 4 tomatoes (depends on how many are eating)
1 onion
feta cheese
1 cucumber
olive oil
salt
olives
oregano

Cut the tomatoes, is wedges,
the onion really thin slices
the cucumber in slices.
Mix them, add salt and some pieces of crumbled feta
oregano
olives
at the end pour the olive oil...
you can add capers I don't really care for them and i sometimes will add a splash of vinegar you can
also add green or red peppers or both!
prepare it and let it sit for a bit so all of the flavors come together and you'll have a really tasty salad!

a different variation to this would also be to cube and boil peeled potatoes, drain the water let them cool and add them to the above ingredients!
