Make up a big bowl of Spanish Cole Slaw...I use red and green cabbage in mine, plus I add shredded carrots!

2 tbsp Cider vinegar
1 tbsp Canola oil
1 Clove garlic, minced
1 tsp Sugar
4 cups Shredded cabbage (about one head)

1. In a small bowl, mix together the vinegar, oil, garlic and sugar until the sugar dissolves.

2. Pour over the cabbage, stir well and refrigerate.

Enjoy!

Frijoles Margareita

Serves 6, about 3 cups

INGREDIENTS:

3 tablespoons extra virgin olive oil
1 medium yellow onion, finely chopped
2 cloves garlic, minced
1 teaspoon cumin
1 1/2 cups cooked black beans
1 1/2 cups cooked kidney beans
3/4 cup fire-roasted salsa
1/2 cup shredded monterey jack cheese
sea salt, to taste
ground pepper, to taste

In a saucepan, heat olive oil and sauté onion and garlic until softened. Add cumin and beans and cook for five minutes. Remove from heat and mash beans with a potato masher or large fork. Stir in salsa. Reheat beans, season and place in a shallow serving dish and sprinkle with shredded cheese. Serve as a bean dip with tortilla chips.

Mexican Rice

Serves 4–6

1 tablespoon annatto seeds
2 tablespoons canola oil
1 small onion, chopped
1 1/2 cups uncooked brown rice
3 cups water
1 cup peas (fresh or frozen)
2 tablespoons fresh lime juice
salt to taste

Garnish

2 to 3 ripe avocados
lemon or lime wedges
grated cheddar or Monterey Jack cheese (optional)
sour cream (optional)
salsa (optional)

In a very small skillet or saucepan, heat the annatto in the oil on medium heat for 4 to 5 minutes, until the oil turns a bright red-orange color. Strain the oil and discard the seeds.

In a medium saucepan, sauté the onion and garlic in the oil for 5 to 6 minutes. Add the rice and sauté for 2 or 3 minutes. Add the water and bring to a boil. Reduce the heat, cover, and cook until the water is absorbed, 35 to 45 minutes. Just before the rice is done, add the peas, but do not stir. The steam will cook them and they will remain bright green. Stir in the lime juice and salt to taste.

Serve garnished with slices of avocado and lemon or lime wedges. If desired, top with grated cheese and/or a dollop of sour cream, and with salsa.

INGREDIENTS:
16 oz bag of frozen corn -or- 2 cans, drained
1 small can of roasted red chiles, finely diced
1/4 teaspoon cumin
1 teaspoon chile powder
1 teaspoon serrano chile, finely diced
1 tablespoon oil
salt to taste

PREPARATION:

Heat oil in a large saucepan over medium heat. Add in corn and let it heat for 5-10 minutes. Sprinkle in seasonings and chiles and cook for an additional 5 minutes. Salt to taste.

Well, something fresh and crunchy I would say a green salad. Or if you want something more Mexican-ish, but not really, a taco salad. I say not really because I have yet to see taco salad on any menu here in Mexico! lol.
Taco Salad

Lettuce--could be a mix of whatever you like
Kidney beans
Frito Lay's tortilla chips (or something similar)
Chopped white onion
Chopped tomatoes
Shredded cheddar cheese
Catalina dressing

Mix all the ingredients and toss with the dressing. Add the chips just before serving and toss to coat with dressing.

We always eat potato salad and macaroni salad, rice and beans with our tamales at Christmas. But I too always get the craving for something cold, crunchy and fresh! You could also just have cucumbers marinated in lime or lemon juice with chopped white onions and oregano. Another suggestion is cut up jicama with chile, sal y limon! Happy eatin'!
