Dry (sukhi) vegetables (subji or bhaji): you are looking for sukhi subjis or bhajis.

Kashmiri Khombi Tarkari (Spicy Mushrooms With Ginger And Chilies)

Ingredients:

Serving Size : 4

3 Tablespoons Peanut Oil
1 Cup Chopped Onion
1 Tablespoon Chopped Fresh Ginger
2 Teaspoons Finely Choppped Garlic
2 Hot Green Chilies minced
1/4 TeaspoonTumeric
1 1/2 Pounds Mushrooms, Cleaned and cut into 1" pieces
1/2 Teaspoon Coarse Salt or to taste
1 Teaspoon Roasted Cumin Seeds crushed
2 Tablespoons Chopped Fresh Coriander for garnish

METHOD:

Measure the spices and place them right next to the stove in separate piles.

Heat the oil in a kadhai, wok, or large frying pan over medium-high heat for 3 mintes. Add the onion and cook, stirring, for 3 minutes. Add the ginger, garlic, and chilies, and cook for 2 more minutes. Add the tumeric, mushrooms, and salt.

Cook, turning them, until all the moisture evaporates and the mushrooms begin to fry (about 15 minutes). Lower the heat, sprinkle on the cumin seeds and the lemon juice, mix well, and contuinue cooking until the mushrooms absorb the lemon juice and look fried (about 5 minutes). Turn off the heat and serve warm, at room temperature, or cold, sprinkled with chopped fresh coriander. Serve with rice or rotis.

I think you can curry or put sauce on veg like baby sweetcorn, leeks, water chestnuts, bamboo shoots, stuff like that?!?

dry indian veg dishes r of 2 types bhaji that is qsterfried with garlic and spiced without adding any liquid and masala that is cooked in a thick spice paste
kashmiri mushrooms will fall in the 2nd type
ngredients (serves 4)

* 2 tablespoons canola oil
* 1 teaspoon coriander seeds (see note)
* 1 onion, finely chopped
* 2 teaspoons ground coriander
* 1 teaspoon ground cumin
* 8 black peppercorns
* 1/2 teaspoon ground cardamom
* 1/2 teaspoon garam masala (see note, p76)
* 1/2 teaspoon ground turmeric
* 1 green chilli, deseeded, finely chopped
* 2 garlic cloves, crushed
* 3cm piece ginger, peeled, grated
* 2 x 400g cans chopped tomatoes
* 500g button mushrooms, thickly sliced
* steamed basmati rice, thick plain yoghurt and coriander leaves, to serve

Method

1. Heat oil in a large saucepan over medium heat. Add coriander seeds and cook until sizzling. Add onion, ground coriander, cumin, peppercorns, cardamom, garam masala, turmeric, chilli, garlic and ginger. Cook, stirring, for 2 to 3 minutes or until onion is soft and mixture is aromatic.
2. Add tomatoes, mushrooms and 2 teaspoons salt. Stir until well combined. Bring to the boil. Reduce heat to low and cook, uncovered, for 30 minutes. Spoon curry over rice. Top with yoghurt and coriander. Also great with paratha
THIS RECEPI TASTES BETTER IF YOU USE SMALL BUTTON MUSHROOMS AND KEEP THEN WHOLE ,takes a bit longer to cook ,make sure u cover the dish tightely when cooking so as the steam does not escape

1/2 kg fresh vegetables

For tempering (Tadka or crackle)

1 tbs veg oil
1 tsp cumin seeds
1tsp mustard seeds
1/2 tsp fenugreek seeds
1 tsp white lentils (Urad dal)
pinch of asafoetida powder
7-8 curry leaves
4-5 red chilies whole

For base
1 tsp ginger paste
1 tsp garlic paste
1 tsp finely chopped green chillies (1-2)
1 large onion (finely chopped)
2 tomatoes chopped
1 tsp turmeric powder
1 tsp coriander seed powder
1 tsp chilli powder
1 tsp mango powder
1 tsp garam masala powder

Garnishing
1/2 cup chopped coriander leaves
1 finely chopped tomato
1/2 lime
2 green chillies whole

In hot wok or frying pan heat oil
Add tempering material one after the other and stir fry for a minute or two without burning.
Add rest of the base materials and stir fry for two to three minutes. Sprinkle little water if needed to keep spices down.
Add vegetables and mix well.
Cook covered for ten minutes or till vegetables are done.
Garnish and serve hot.
