Does anyone know how to cook a good sag aloo?!


Question: I've fallen in love with this dish and would love to make it at home. Unfortunately, every recipe I have found online has totally failed me. Any Indian chefs out there who can help me out?

Ingredients:
1 large onion, chopped
2 large potatoes, cubed
400 g spinach or chard leaves, stalks removed, roughly chopped
1 teaspoon fresh ginger, grated
1/2 teaspoon garlic cloves, coarsely chopped
1/4 teaspoon cumin seeds
1 teaspoon turmeric
1 teaspoon garam Marsala
olive oil
butter
salt

Directions:
1.Fry the cumin seeds in a heavy bottomed pan in a bit of oil and butter until just starting to brown.

2.Add the onion and fry until it too starts to brown.

3.Add the potato, garlic, turmeric, ginger and garam Marsala and fry until the potato starts to soften.

4.Unless you are using a non-stick pan, you may need to add water and cover to keep the potato from sticking and to help it cook. The first time I did this 1/2 cup at a time and it took about 20-30 minutes but I now prefer to parboil the potatoes, which means you add less water and it only takes about 10 minutes to finish off from this point.

5.Add the spinach or chard and cook until it collapses over the potato.

6.Salt to taste.

Ingredients:
4 medium potatoes, quartered
3 tablespoons curry massalla gravy
2 tablespoons thick yogurt
1/2 onion, coarsely chopped
3 teaspoons curry powder (hot or medium)
1 teaspoon hot chili powder
2 hot green chili peppers, finely chopped with seeds
4 crushed garlic cloves
2 teaspoons gingerroot, grated
5 tablespoons vegetable oil
10 tablespoons roughly chopped coriander leaves
1 tablespoon whole coriander leaves
300 g spinach leaves, coarsely chopped
1 teaspoon garam masala
1 ounce butter
1 teaspoon turmeric
1/2 teaspoon sugar
1 1/2 teaspoons salt
1 tablespoon water

Directions:
1.Par-Boil the potatoes with a 0.5 tsp salt and turmeric for around 10-15 minutes being very careful to just undercook by around 5 minutes

2.Make a paste of the curry powder, garam massalla and chilli powder with a little water.

3.Fry the onion until translucent in the veg oil then add the garlic, ginger and chilli and stir fry on medium for a further 5 minutes.

4.Add the curry and chilli powder paste and stir fry for a further 30 secs.

5.Add the potatoes, the Massalla Gravy, yogurt and spinach and simmer for 5 minutes or until the spinach is reduced, stirring occasionally.

6.Add knob of butter and sugar - salt to taste.

7.Now add the finely chopped coriander leaves and cook for a further minute.

8.Serve with the whole coriander leaves sprinkled over the top.

SAAG ALOO (Potatoes & Spinach)

Ingredients:

2 large potatoes
2 Tbsp vegetable oil
2 cardamon pods
6 black peppercorns
1 clove garlic
1 medium onion
1/2 tsp red chili powder
1 inch fresh ginger
1 tsp cumin powder
1 tsp ground coriander
2 Tbsp water
16oz spinach
3 tbsp cream (or yogurt)

Cut the potatoes and soak in a bowl of water. Heat oil in pan, then add in cardamom seeds and crushed peppercorns. Saute for 3 minutes. Chop ginger into slivers, onion into strips and crush the garlic. Add in garlic, onion, chili and ginger, and cook another 4 minutes.

Stir in cumin and coriander. Add the potato pieces at this point, blending them thoroughly. Add in 2 Tbsp of the water plus the spinach and simmer 20 minutes. Add the cream or yogurt. Serve with rice or rotis.
