Mandarin collars of course!
Chefs are professional business men and artists. They are neither White nor Blue.
The ones I know prefer to just wear light cotton t-shirts (if allowed) because it is so damn hot while cooking on those high output jet burners, but professionally they wear white.
Unless of course you are your own boss and are the exec chef, then you can wear any damn color you want!
