I am opening a mexican food/grocerie/meat market place and need an idea for a mascot? A vegetable or pig, etc.!

Menudo isn't an animal, so I'm not sure how you would make a bowl of soup into a mascot.

Depending where your store is located Manny Menudo may or may not work. If you are located in a multi ethnic or non Hispanic neighborhood, you will find yourself constantly explaining Manny Menudo.

I would stick to your families proud name or the city - towns name.. as for mascot or logo any shopping cart

you could use a donkey or a chille pepper they could be wearing a poncho

La Calabasita (the little squash). You could have a comical character dressed as a yellow squash in a serape and sombrero with a big smile and a moustache.
