I had a GREAT chinese eggplant (the very colorful purple kind) and sauteed chicken dish. Sautee it all in a low salt soy sauce, add sesame seeds, and serve it over brown rice.

I am a vegetarian but before I became one, I used to love Chinese ginger chicken. Really, really yummy. Just google the recipe...This is an authentic Chinese recipe :)
