I need a recipe for fajita seasoning. I live in New Zealand and have not yet found a packaged mix.?!


Question: Fajita Seasoning Mix

Prep Time: 10 minutes
Ingredients:

* 3 Tbsp. cornstarch
* 2 Tbsp. chili powder
* 1 Tbsp. salt
* 1 Tbsp. paprika
* 1 Tbsp. sugar
* 2-1/2 tsp. crushed chicken bouillon cube
* 1-1/2 tsp. onion powder
* 1/2 tsp. garlic powder
* 1/2 tsp cayenne pepper
* 1/4 tsp. crushed red pepper flakes
* 1/2 tsp. cumin

Preparation:
Combine all of the ingredients in a small bowl. Pour into small glass or plastic container, seal tightly and store in a cool, dry place. Makes the equivalent of 3 packets of commercial or purchased Fajita Seasoning Mix.

Chicken Fajitas

4 boneless, skinless chicken breasts
1 green bell pepper
2 Tbsp. oil
3 Tbsp. Fajita Seasoning Mix
1/3 cup water
1 medium onion, chopped
1 cup salsa
1/2 cup sour cream
1 cup grated Cheddar cheese
6 flour tortillas

Prepare the fajitas using the same directions found on the package of purchased seasoning mix:

Cut chicken into thin strips. Cut green pepper into strips. Heat oil in large skillet and add chicken. Cook and stir over medium high heat for 5 minutes. Then add three tablespoons of the Fajita Seasoning Mix, water, green pepper and onion. Reduce heat to medium. Cook and stir over medium heat until chicken is cooked through and vegetables are tender. Serve with salsa, sour cream, and grated cheese in warmed tortillas.

I dont have exact proportions but this is what I use...

Salt
Garlic
Cliantro
Cumin
Pepper
Lime

This is excellent! A little spicy, so watch the red pepper if you are sensitive to heat, but it is wonderful and works great with all the basic fajita choices!

1 tablespoon chili powder
1 1/2 teaspoons cumin (I prefer more ...)
1 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes (or pinch of cayenne, to taste)
Combine all. Store in an airtight container.

I usually just cook my meat or veggies and add some chili powder, cumin, garlic powder and cilantro to the juices. The I squeeze some lime juice over it when ready to serve

1. 12 ounce amber lager (Mexican beer is good)
2. 3 Tablespoons fresh lime juice
3. 1 Tablespoon seeded and minced jalapeno pepper
4. 2 large cloves garlic, minced

Place steak in large resealable plastic food storage bag. Combine lager, lime juice, jalapeno and garlic in small bowl; pour over steak. Seal bag tightly, turning to coat. Marinate in refrigerator 1 to 4 hours, turning once.

After you have the steak marinated, drain marinate and discard. Cut meat across the grain and cook any way you like.

Fajita Blend
Yield: 1/2 Cup

4 Tbsps chili powder
2 Tbsps ground cumin
2 tsps. ground oregano
2 tsps. garlic powder

Place all ingredients in a jar with a tight-fitting lid; shake to mix well. Uses: Sprinkle on thin cuts of meat before grilling, broiling, or pan-frying. Slice the meat into strips for fajitas. Add to meat loaf or meatball mixture. Stir into refried beans while heating. Stir into ranch dressing or salsa.
