Anyone have the recipe for that mongolian pocket bread?!


Question: The bread they serve at Mongolian BBQ Restaurants. I can't find the recipe any where. I know it's got to be unlevened, it has to be simple... Help? Thanks!

POCKET BREAD

4 1/2 c. flour
1 1/2 tsp. sugar
1 tbsp. yeast
1 1/2 tsp. salt
1 1/4 c. water
2 tbsp. oil

Combine 2 cups flour, yeast, sugar and salt. Mix well. In saucepan, heat water and oil until warm, 120 degrees. Add to flour mixture. Blend at low speed until moistened, beat 3 minutes at medium speed. By hand, gradually add enough flour to make firm dough.
Knead on floured surface 10 minutes. Cover dough with plastic wrap, then a towel. Let rest 10 minutes. Punch down dough. Divide into 12 hunks. Shape each into small ball. Place on board, allowing space between each ball. Place on board allowing space between each ball. Cover, let rise 30 minutes.

Preheat oven to 500 degrees. Roll each ball into a 6-inch circle. Place 3 circles at a time directly onto oven rack. Bake until puffed and top just begins to brown, about 3 minutes. Cool on a cooling rack. Makes 12 pocket breads. Fill with chicken salad or anything you like.
