Are there any vegetarian Philipino dishes?!


Question: VEGETARIAN PANCIT:

If you want an eggless version, use eggless or rice noodles instead. Also, feel free to add your favorite vegetables (snow peas, baby corn, mushrooms, broccoli....).

Ingredients:

1/2 kilo dry egg noodles, blanched
1 pkg of extra firm tofu, drained well, cubed
1 small head of cabbage shredded
1 medium sized carrots julienned
3 stalks celery sliced
2 1/2 cups vegetable stock (or water is fine)
1/4 cup soy sauce
1 medium onion sliced
3 cloves garlic minced
crushed red pepper flakes (optional)
salt and pepper to taste

METHOD:

Heat some oil in the pan and saute the veggies for a few seconds, enough to half cook them. Season with a little bit of salt. Remove and set aside.

Add some more oil and saute the garlic and onions. Add in the tofu and stir fry for a few minutes until the tofu is browned. Season with salt and pepper and a dash of soy sauce. Remove and set aside.

Boil stock and soy sauce in the pan. Add in the blanched noodles. Let simmer until the noodles absorb the liquid. Add in all of the veggies and tofu last. Mix and let heat through.
Serve hot.

If it's made with fish sauce then it's not vegetarian! Fish sauce is made from fish.

But you can use soy sauce instead of fish sauce, and maybe some natto if you like that.

You can make vegetarian lumpia, and you can make pinakbet without the chicharron, though I would suggest you add something else for savory flavor instead of the chicharron, like mushrooms or something.
