What is Beef Kafka? Any links to recipes?!


Question: I eat lunch once a week at a great local lebanese restaurant. I always get a plate with Beef kafka, chicken kabob, cabbage roll, hummus. I love it and I wish I could make it at home. Anyone knowledgeable about Greek and or Lebanese food please help. Thank you.

Every person makes it differently, and there are a million different ways to make it.

The way I make it is get some beef (it does need to have some fat in it, maybe 15-20%.

I put 1 onion and 2-3 garlic gloves in a food processor until
they are pureed.

There are packets of kofte (kafka) spice you can buy at your middle east store. I will add some of this as well as some cumin, salt, pepper, crushed red pepper, parsley. (Sometimes I add mint too, but I will usually take out hte cumin)

Add bread crumbs, and an egg. Knead together.

Form into flat log shapes (for lack of a better term). You can barbecue them, broil them, or put htem on the George Forman.

I didn't give exact amounts, because I never had a recipe. We like things spicy, but not everyone does. It's all to taste. But if you start with 2 lbs of ground beef, the onion, garlic should be enough.

My mother in law will sometimes add fresh mint and green onion that is chopped. They stick out of the kofte, but it's yummy.
