SWEET POTATO Biscuit Recipe?!
Thank You!
Answers: At a party recently a new Japanese girl friend of mine brought delicious sweet potato biscuits. She was shy about giving me the recipe but stated that the sweet potato was a special kind only available at the Asian market and there was NO flour in the recipe. I really want this recipe but did not want to push her so perhaps someone out there can help me I hope! =)
Thank You!
JAPANESE SWEET POTATO BISCUITS:
*Makes 4 servings
INGREDIENTS:
2 small satsuma-imo (sweet potato/yam)*
1 egg yolk
2 tbsp butter
1 tbsp milk

Steam satsuma-imo until soften. Peel satsuma-imo skin and mash the satsuma-imo in a bowl. Add butter, egg yolk (leave some for glazing), sugar, and milk in the bowl. Stir the ingredients well. Make small oval-shaped sweet potato cakes and put each cake on an aluminium cup. Mix some water and left-over egg yolk in a small cup. Glaze cakes with the egg mixture. Place cakes on a tray and bake in 375 F oven for 10-15 min.
*SATSUMA-IMO are Japanese sweet potatoes, these are available at Japanese mkts or some Asian grocery stores.
I want that recipe, too. Those sound so good!
Can't really give any advise except that by coincidence I heard about these cookies before a few days(overheard a conversation of someone who made them, here in greece)!I am pretty sure that you can make them with more simple ingredients. I am as curious as you to read the recipe!!!
Good luck!
Sweet Potato Biscuits
Ingredients-
1 cup all-purpose flour
3 teaspoons baking powder
2 teaspoons white sugar
1 teaspoon salt
2 tablespoons shortening
3/4 cup mashed sweet potatoes
1/4 cup milk
Preparation-
Preheat the oven to 400 degrees F (200 degrees C).
In a medium bowl, stir together the flour, baking powder, sugar and salt. Cut in the shortening until pieces of shortening are pea-sized or smaller. Mix in the sweet potatoes, and enough of the milk to make a soft dough.
Turn dough out onto a floured surface, and roll or pat out to 1/2 inch thickness. Cut into circles using a biscuit cutter or a drinking glass. Place biscuits 1 inch apart onto a greased baking sheet.
Bake for 12 to 15 minutes in the preheated oven, or until golden brown.
