What's the word for a food that cleanses your palette between courses in a meal? I think the word is French.!

Question: I am a former chef, trained in classical french cuisine, and like the term used with a pre dinner item, they do use the term "Amuse Bouche", which loosely means fun in the mouth.

Sorbet

I think that you're looking for the Italian word "Intermezzo". Sorbet is commonly used as such.

You could call it the palette cleanser or maybe the intermezzo as it sometimes called.

Amuse bouche
From Wikipedia, the free encyclopedia

An amuse-bouche, also called an amuse-gueule, is a tiny bite-sized morsel served before the hors d'?uvre or first course of a meal. These, often accompanied by a proper complementing wine, are served as an excitement of taste buds to both prepare the guest for the meal and to offer a glimpse into the chef's approach to cooking.
