Guacamole dip is very easy to make and doesn't have to be reheated. You can bring tortilla chips to go with it.

I'd suggest using canned tomato instead of fresh unless you can get good fresh tomatoes where you live this time of year.

Of course. That's a good idea. Tamales are very traditional and popular at this time of the year... and Mexican candy is good, too.

How about a really chunky SALSA (FRESH, not the kind in a jar) ??? With some warmed tortilla chips?

I am from Cali, and we literally LIVED off of fresh salsa and tortilla chips!!

Rice and re-fried beans would be a good thing to take. You could take a home made salsa with chips (tortilla). You could make chicken mole. A platter of enchiladas, red or green. There are several good things that you can make to take.

Mexican rice is good, cheese quesadillas are easy and good.

Taquitos with salsa and guacamole is my favorite.
