I need recipe to make cauliflower with curry but no liquid.?!


Question: Cauliflower Bhaji (Sookhi or dry)

Ingredients

1 large cauliflower, broken into florets
1 large potato, cubed (optional)
1 large onion, thinly sliced
1 inch piece of ginger, peeled and finely minced
2-3 small green chilies, sliced thinly
1 cup frozen peas
1/2 tbsp blk mustard seeds
1 tsp cumin seeds
4-5 curry leaves
1 tsp turmeric
1/2 tsp ground coriander
1 tsp garam masala
salt to taste
juice of 1/2 lemon
2 tbsp oil (or more if needed)
freshly chopped cilantro leaves

Instructions

In a large skillet or wok on medium high heat, add the oil and when hot add the black mustard seeds. When they stop popping, add the cumin seeds, green chilies and curry leaves. After a few seconds, add the onions and saute. When they start to brown, add the ginger. Stir fry and add the spices.

If you are using potatoes add them now. Stir fry for 5-6 minutes. Add the cauliflower florets and stir fry another 4-5 minutes. Add the frozen peas, salt and lemon juice. Stir, cover and reduce the heat. Cook until potatoes & cauliflower are tender (10-12 minutes). Garnish with cilantro leaves and serve.

1 tsp chilli flakes
1 tsp cumin seeds
? cauliflower, cut into florets
hot water as needed
7 new potatoes, chopped into small chunks, par-boiled and drained
85ml/3fl oz semi-skimmed milk
salt and freshly ground black pepper to taste
1 tbsp fresh coriander, chopped
1 tbsp fresh chives, chopped



Method
1. Heat the olive oil in a large frying pan over a moderate heat. Add the sliced onion and fry for 2-3 minutes, until softened.
2. Add the curry powder, chilli flakes and cumin seeds and fry for a further minute.
3. Add the cauliflower florets, stir well to coat in the spices, and then add enough hot water to cover the cauliflower. Bring to the boil then lower the heat to a simmer for 8-10 minutes.
4. Add the par-boiled potatoes and cook for two minutes, or until the potatoes and cauliflower are completely cooked.
5. Add the milk, season, to taste, with salt and freshly ground black pepper and heat through for one minute.
6. Add the coriander and chives and stir through.
7. To serve, spoon the curry into four bowls.

take the cauliflower and break it up into good sized pieces
lay in a glass casserol (sp?) dish like one ud use to make brownies in...
drizzle w/ EVOO
next make a masala--if u know what dhokla is, its got sorta the same spices...
cumin, salt, parsley, EVOO, mustard seed, tumeric, bay leaf, and chili if u want
bake in the oven at 400 until 3/4 the way til golden yellow(due to tumeric)
put on broil
golden yellow
take out serve...theres really no liquid but w/o liquid, how do u make a curry?
