What is this Indian Dish called?!

ALOO GOBI AUR LAL SIMLA MIRCH (Cauliflower, potato & red bell pepper subji)

Ingredients

1 large cauliflower, broken into florets
1 large potato, cubed
1 red bell pepper, julienned
1 large onion, thinly sliced
1 inch piece of ginger, peeled and finely minced
2-3 small green chilies, sliced thinly
1 tomato, chopped
1 cup frozen peas (optional)
1/2 tbsp blk mustard seeds
1 tsp cumin seeds
4-5 curry leaves
1 tsp turmeric
1/2 tsp ground coriander
1 tsp garam masala
salt to taste
juice of 1/2 lemon
1 cup of water, or more if needed
2 tbsp oil (or more if needed)
freshly chopped cilantro leaves

Instructions

In a large skillet or wok on medium high heat, add the oil and when hot add the black mustard seeds. When they stop popping, add the cumin seeds, green chilies and curry leaves. After a few seconds, add the onions and saute. When they start to brown, add the ginger. Stir fry and add the spices.

Add the potatoes and stir fry for 5-6 minutes. Add the red bell pepper, stir fry 2-3 minutes and add the cauliflower florets and stir fry another 4-5 minutes. Add the frozen peas, salt, water and lemon juice. Stir, cover and reduce the heat. Cook until potatoes & cauliflower are tender (10-12 minutes). Garnish with cilantro leaves and serve.
