Green Beans with Soy Sauce?!


Question: There's this restaurant in the Eden Prairie Mall in MN called the The Great Mandarin. On their menu, there are these green beans that are with soy sauce. They are tender and juicy and oh so delicious! Does anyone know how to make a recipe similar to these green beans? I found one here: http://nene.essortment.com/chinesegreenb...

Do you think if I put a little less garlic and a little more soy sauce, I could recreate these green beans?

I love those! They are Chinese long beans, they are blanched in hot boiling water for 2-3 minutes and then immediately shocked in an ice bath. Then tossed in a wok.

INGREDIENTS:

1 pound long green beans

Sauce:
1 tablespoon bean sauce (available at Asian markets; Koon Chun is a good brand, or you can substitute hoisin sauce)
1 tablespoon dark soy sauce
2 teaspoons Chinese rice wine or dry sherry
1 1/2 teaspoons sugar

Other:
1 tablespoon chopped garlic
1 tablespoon chopped ginger
2 scallions, chopped, white part only
1/2 teaspoon chili paste
3 tablespoons vegetable or peanut oil for stir-frying, or as needed

PREPARATION:

Wash the green beans and drain thoroughly. Trim the ends and cut on the diagonal into pieces approximately 2 inches long.

Combine the sauce ingredients and set aside.
Heat the wok on medium heat and add 2 tablespoons oil, drizzling the oil down the sides of the wok.When the oil is hot, add the beans. Stir-fry for 7 - 10 minutes, until their skins pucker and turn brown and the green beans are tender without being mushy (I find 10 minutes works very well). Remove the beans from the wok.

Heat 1 tablespoon oil in the wok on medium-high heat. When the oil is hot, add the chopped garlic, ginger and scallions. Stir-fry briefly for a few seconds until aromatic. Add the chili paste. Add the sauce and the green beans. Toss the ingredients together and serve hot.

you boil green beans then you but terakyi sauce and soy togther and pour them all over te green beans

1/2 kg green beans (buy the skinny french green beans)
1 tablespoon butter
2 tablespoons soy sauce
1 garlic clove (mashed)


Top and tail the green beans.
Melt butter in saucepan.
Add mashed garlic clove.
Put beans in saucepan and let them sizzle for 1min or until they turn bright green.
Add soy sauce.
Stir through.

STIR FRIED GREEN BEANS

1-2 lbs. fresh green beans
soy sauce
sesame seeds
butter

Wash and remove ends from the beans. I use a wok but a large frying pan may also be used. Heat pan on medium-high. Add 1-2 tablespoons of butter in pan and add the green beans. Splash soy sauce to coat beans. Stir continuously. Add sesame seeds and cook for 7-10 minutes.
