1. Indians use the following spices:
Coriander Seed, KasriMethi, Cardamom Green, Red Chili Ground, Fried onions, Black Pepper(Ground), Turmeric Ground, Mustard seeds or Rai, Roasted Coriander Ground, Asafetida or Hing (Vandevi), Cumin Ground, Panchpuran, Saffron, Fennel Seeds, Fenugreek Seed, Ginger Ground, Amchur Ground, Poppy Seed 0r Khas Khas, Ajwain Seed, Bishops Weed, Carom, Black Salt Ground, Whole Round Chillies, Cinnamon (Kerala Cinnamon), Cloves, Black Cardamom, Black Pepper(Whole), Sesame Seeds White, Kallonji Nigella Seeds, Sesame Seeds Natural, Anardana/Pomegranate Seed

2. They mix spices to taste. Sorry, this is a subjective question. Basic or essential Indian spices-
When doing Indian cooking there are the basic spices which go into most dishes - We take a pot - add ghee in it then we add cumin seeds or mustard seeds and asafetida till they sizzle, (at this time we may add some complementary basic spices given below) we then add red chili powder, coriander seeds and turmeric powder. We then add our vegetables and steam.

Cumin seeds (jeera, jeeragam, jilakara, black cumin, kala jeera, royal cumin, shah jeera)
- A basic Indian spice. Used mainly in North India. Used for its strong but very pleasing flavor. Used for digesting foods.
- One of the five spices in the Bengali panchporan (five spice) mixture
- They can be fried whole in oil, or ground, or roasted and ground, or ground and then roasted, all with different results.

Turmeric (haldi)
- A basic Indian spice.
- Used mainly for its medicinal properties, and lovely color that it gives to the dishes.

Coriander seeds (dhaniya)
- A basic Indian spice.
- Used mainly for its fresh, cooling and soothing taste

Chili Powder -
- Now a basic Indian spice.
- Used mainly for its pungent and fiery taste - one may use fresh green chilies instead.

Mustard seeds (black)
- A basic Indian spice.
- Used mainly in South and West India instead or along with cumin seeds. Used for its strong but very pleasing flavor. Good for digesting foods.

Asafetida (hing, heeng), also spelled asafetida
- A basic Indian spice. Used as a digestive and for its flavor
- Used mainly for its strong sulfur taste on the lines of garlic.


3. They often eat chicken if they are not vegetarian. Even omnivorous Indians don't eat meat every day.

3) they have kinda started to...but religious hindus avoid eating it since they are vegetarians!

Not all Indians are Hindus. Some are Sikhs, some are Christian, and yes, some are Hindu.

Cinnamon is good in non-sweet dishes. I made one up that seems very Indian.
Cut up two skinless boneless chicken breast halves into bite size cubes. Add one can of black beans, fill up that can with brown rice and add that. Fill up that can 2 1/2 times with water and add that. Dice 1/2 onion and add that. Add chopped garlic, and salt. Add about 3 tbls cinnamon. Bring to a boil. Cover and reduce heat to low. Stir occasionally until all water is absorbed. About 45 min. to 1 hour. Enjoy

Indians use lot of spices in their preparations... and every basic food item will have turmeric in it..
spices that we use in general are turmeric, red chilli powder, green chillies, pepper, garlic, ginger, cumin seeds, cinnamon, mustard seeds, etc..
every food item has its own recipe...Indian dishes are the most simple and healthiest food items in the world... your dnt have to be on diet if you are having proper indian food regularly..almost all the spices i mentioned above are having medicinal properties and yes we also use corriander leaves alot...umm ill update my answers
yea and one more thing abt few anwers i read i will like to say tat Indians have many sects
Its not hindus who dnt eat spices ...its all wrong presumptions..Indians are divided into Hindus, Muslims , Christains, Sikhs and other minorities...
in these sects we have brahmins and other castes and accordingly brahmins dnt eat non veg and other castes have non veg in their diet. But it all depends on ones preference..

1) Chilli power, haldi (turmeric), jeera (cumin), Dhonia (coriander), star annise, cardamon, cinnamon, methi (fenugeek), clove and paprika are all very common and usually form the base mix in a curry paste or powder.

2) Dhonia and Jeera (2:1 mix) are always good, I would always recommend that you don't use too much Haldi as it makes the sauce too earthy and the colour too vivid. Chilli should be to taste but becareful with it.

3) Indian cooking is very versatile and can use any meats, poultry and vegetable. The amount to of chicken consumed is very much dependent on the individual and the region.

1). The most popular Indian spices are Black mustard seeds, cumin seeds, coriander seeds, garam masala, red chili powder and turmeric. These are the basic spices. Other spices include mace, nutmeg, cinnamon, cloves, cardamom, star anise, saffron, bay leaf, curry leaves... alot of these spices are in garam masala (Indian spice mix)

2). Indians are the best at combining spices, my dear they all work well together --- you just have to know how to do it!

3). Chicken is probably one the most popular "meats" in India, it is enjoyed in both the North & South. Many people dont eat beef, pork, lamb or seafood.... but the majority of non veg eaters will eat chicken.

Sclomogo...was right on the money. Indians eat most meat that is not beef. Pork is not very popular either. Chicken, lamb, and goat are all very popular.

its' all about the CHICKEN, so forget about spice and learn how to bake&baste and then eat like the animal you once were about 250 million years into the past.
