Question: I would like to make bulgogi beef and rice for dinner tonight; however, I was thinking about chopping up some bok choy and cooking it with the beef. Do you think that would work?

If not, do you have any good bok Choy and beef recipes that you could send my way?

I think bok choy would be fine with bulgogi. I like bulgogi. :)
Kimchi would be a nice side dish also.

bulgogi beef should be sweet and tender stir-fry. The bok choy with the beef actually would overpower the beef. I suggest cooking if separate, and cooking the bok choy with some oil, butter and garlic.

i agree. bok choy should be on the side. Really, I think mostly it is served as a side vegetable... but you're the one whose eating it, so by all means, add whatever you please! : )
