Answers: I would like to make bulgogi beef and rice for dinner tonight; however, I was thinking about chopping up some bok choy and cooking it with the beef. Do you think that would work?

I think bok choy would be fine with bulgogi. I like bulgogi. :)
Kimchi would be a nice side dish also.

bulgogi beef should be sweet and tender stir-fry. The bok choy with the beef actually would overpower the beef. I suggest cooking if separate, and cooking the bok choy with some oil, butter and garlic.
i agree. bok choy should be on the side. Really, I think mostly it is served as a side vegetable... but you're the one whose eating it, so by all means, add whatever you please! : )
