This is a Hong Kong Lemon Chicken recipe.

8oz boneless chicken
1 egg white
2tsp cornflour
2 1/2 fl.oz or 70ml groundnut oil

sauce
70ml chicken stock or water
1 1/2 tblsp lemon juice
2tsp sugar
2 tsp light soy sauce
2tsp rice wine or dry sherry
1/2 tsp garlic, finely chopped
1 dried red chilli or 1/4 tsp chilli powder
1 tsp cornflour, blended with 1 tsp water

Cut the chicken into strips about 3 cm long.
Combine the chicken with the egg white and cornflolurin a bowl and put in the fridge for 20 mins.
Heat the oil in a wok until quite hot and add the chicken strips. Cook until the chicken turns white.This only takes a minute.Drain in a colander.
Wipe wok clean and heat again.
Add all sauce ingredients except the cornflour mixture.
Bring to the boil and add cornflour.
Simmer for 1 minute.
Return chicken to the sauce and stir-fry them long enough to coat them all well with the sauce.
Serve at once.

The chicken strips can be battered or breadcrumbed beforehand if you fancy it.

Coat the chicken pieces in rice flour, then deep fry each piece. To make sauce, stir fry in a pan or wok, 2 tablespoons honey, 3 tablespoons lemon juice, 2 tablespoons water, salt and pepper to taste. Toss the sauce with the fried chicken pieces and serve.

CHINESE LEMON CHICKEN

Ingredients:

2 tablespoons dry sherry
4 green (spring) onions, chopped
1 piece of root ginger, shredded
500g (1 pound) boned chicken, cut into 1 inch strips
2 celery sticks, sliced
125g (4oz) button mushrooms, quartered
1 green pepper, cored, seeded, and sliced
2 tablespoons light soy sauce
Shredded rind of 2 lemons
A few lemon slices to garnish
2 tablespoons oil for stir-frying

Preparation:

Put the sherry, spring onions and ginger in a bowl. Add the chicken, toss well to coat, then leave to marinate in the bowl for 15 minutes. Heat the oil in a wok or frying pan. Add the celery, mushrooms, and the green pepper. Stir-fry for one minute. Add the chicken and marinade, then cook for 3 minutes. Stir in the soy sauce and lemon rind then cook for a further minute. Pile into a warmed serving dish and garnish with lemon slices. Serve with jasmine rice.
