Here's a San Jacobos recipe:
Basic ingredients:

sliced ham
thinly sliced cheese
1 egg beaten
olive oil
fine breadcrumbs

Steps:

1. Get a slice of ham and place a slice of cheese on top then roll these together dip in the beaten egg and then the breadcrumbs and place on a plate.
2. When all the slices have been prepared fry in hot oil until golden.
3. Place on kitchen paper to drain off excess oil before serving.

Ideas:

The quantity of sliced ham and cheese depends on how many you want to make. You can also add sliced red pepper or thinly sliced aubergine (eggplant) on top of the cheese before coating in breadcrumbs and frying.

But here's a very easy recipe and tastes great. One I've used for my Spanish class years ago. I'll give it to you in Spanish as I'm sure you might be required to provide the recipe in spanish as well:

Flan de Leche

Ingredients:
Caramel:
1 cup sugar
1/4 cup water

Custard:
12 egg yolks
two 13 ounce cans evaporated milk
14 ounce can condensed sweetened milk
1 teaspoon vanilla

Cooking Instructions:

Carmel:
Caramelize sugar in a sauce pan by boiling the water and stirring continuously over medium heat until sugar is melted. Pour caramelized syrup into flan mold o custard cups, tilting the mold to make sure the whole surface is covered.

Custard:
In a large bowl, combine all custard ingredient. Stir lightly when mixing to prevent bubbles or foam from forming. Strain slowly while pouring caramel lined flan mold. Preheat oven to 325 degrees. Cover mold with tin foil. Put molds in a bigger tray filled with water. Bake in oven for one hour or until mixture is firm. Cool before unmolding on a platter.

Quesadillas I hope I spelled that right. LOL everyone loves them. Ooh Ooh another one thats good Tre Leche cake yum yum I'm making myself hungry.

Make up some sort of tapas....you could probably create some sort of shrimp dish fairly quickly. Like do shrimp with an oil and red pepper flake dipping sauce. The tapas place we go to serves a warmed goat cheese dip with pieces of bread which is insane as well....

queso(cheese dip)..............super easy

velveta cheese
rotel tomatoes

cut the cheese into cubes, put in microwave for a little bit..not to long.
put in tomatoes.

TADA!!! your done!

p.s. bring chips.

or, this may sound stupid, Fried ice cream.........
all it is is ice cream rolled in rice crispies and fried for like three seconds........it is soooooooo good.

tacos
quesedillas
platanos
flan
paella

(: i soo can't wait for the
spanish partay!
YAY!
adios amiga!

GOOD LUCK!
happy holidays!
?

So I'm thinking Spanish as in from Spain, in that case, tortilla, which is an omelette, or paella. Something easy, how about manchego cheese and iberico ham.

But items like Quesadillas or Tacos are not Spanish in the sense from Spain, but Mexico or depending on from who you hear it, American/Texan/Mexican food.

go to taco bell!

Yummy Chicken Flautas:

3-4 boneless skinless chicken breasts
10-12 flour tortillas
A jar of your favorite salsa
melted butter

Boil the chicken breasts until cooked through (about 20 mins)

Cool, then shred the chicken (pull apart into small pieces)

Mix 2 or 3 tablespoons of salsa into the chicken

Roll the chicken mixture into the tortillas to make about 1 inch thick rolls. Secure the rolls with toothpicks. lay the rolls on a cookie sheet. Brush with melted butter (not margarine).

Bake at 400 for 10-15 mins, until they brown slightly.

Cut into serving-size pieces and bring the extra salsa for dipping. You can also dip in sour cream and guacamole.

These are traditionally deep-fried, but are easier and just as yummy to bake.
