Lemongrass, can you eat this, or do you just remove it from your dish and set it aside?!

I often use dried lemongrass in thai curries etc, but I always remove it as it is tough and woody and not really suitable to eat.

the structure is fibrous like sugarcane.the taste and smell comes from its inner juice that you get by boiling and squeezing.however,it is possible to eat its fibrous structure just by blending it into a paste,just like how to eat lemon skin.make sure it is finely blended and not dry or else,it'll feel like eating wood husk.yuks!

If the lemongrass was used as a marinade then you can eat it. However, if it's in soup just set it aside because the piece is probably to big to chew.

You can certainly eat it but if it is too woody then you don't have to.
