What makes Chinese fried rice yellow?!


Question: Traditionally Chinese fried rice is typically brown unless it's a curried fried rice or house special fried rice. But it's the curry powder which in turn contains TURMERIC. It's not saffron, it's plain old turmeric that gives a yellow color with no extra flavor really.

I don't know but ours is usually brown....

im guessing it's the oils and the juices from the other ingredients.

It's egg yolks. The egg yolk creates a thin film over the rice, providing the color.

That sounds a bit suspect. I've never seen yellow fried rice before. Two things I don't eat, yellow rice and yellow snow.

If it's yellow, it might be saffron. However, every batch of fried rice I've ever had or made is brown (or more specifically tan), and this is caused by the cooking and the soy sauce. The scrambled egg is yellow, but that's it.

Its different type of rice, and clam sauce makes it brown.

If they say yellow liquid food color than that is the correct answer.

Ask them why ?

Saffron

It is the yolk of the egg. However, for it to be yellow, beat the egg first before putting it in to fried with the rice.

And for seasoning, do not put in any soy sauce, use fine salt and pepper.

In fact, put the seasonings into the egg, beat them up. Then , mix it together with the rice and you would get the bright cheery yellow fried rice....:)

You don't get yellow fried rice, cheery or otherwise, from egg. Period.

Saffron in rice makes "saffron rice" which has a very distinct (and yummy) flavor that is not fried rice.

The color you see in some fried rice is from tumeric.

It would be a mixture of egg yolk i think. Usually soy sauce is used with fried rice :0

I do not add soy sauce in my fried rice and I season it with salt only. I like the pale yellow colour, the coating from beaten eggs.

I just have made egg fried rice for dinner.

It could be either yellow food color or turmeric which can make fried rice yellow without flavor. Some of Chinese restuarant in my town do make yellow fried rice. Egg yolk doesn't make fried rice yellow and curry powder will make fried rice yellow with spicy test.
