Who's tried lutefisk?!

I am a former chef and have had it a number of time, while similar to salted cod, it is cured in lye and dried so it is a lot more dry and needs a bit longer soaking, I like all the Scandinavian variations, but the Swedish one made like the french "Brandad du Morue" is my favorite.

It is an acquired taste like lefse it is a tradition at this time of years, I had it in a cassarole served with a sweet and sour reindeer stew and red cabbage.

A footnote, I am not saying it tastes like salt cod but is similar it texture and cured, I was a bit surpirised my first time having it, I have had it in Sweden and Norway.

If it tastes anything like baccala, you couldn't pay me enough to try it.

I like it! Yummy! I know it as Saltfish....or salted cod...another variation is soak it overnight,, shred it, then put ,olive oil, olives, onions, tomatoes and boiled eggs(cut up)...so so good

Yes, it is an acquired taste which I never acquired. The stuff is disgusting-- who wants to eat something that has (or has had) lye in it?
