Question: Does anyone still sell Queso de Bola in the round tin can?
The ones that they sell now are packaged in red cellophane. They are not as sharp as the cheese that our family had in my youth.

The Queso de Bola in a can was not Queso de Bola at all. Queso de Bola is Edam Cheese. Old people like me remember that it tasted so different from the ones sold today. The explanation is this: The Edam cheese of the past used to take months to travel to the Philippines, and under minimal refrigeration if any. The cheese matured in transit, and the oil separated from the curd. BY the time the cheese ball is sold at Christmas time, the cheese is really aged and crumbly inside and almost indistiguishable from the pliant Edam that left Europe many months before.
