What kind of side dish can I bring?!


Question: I am attending my office party tomorrow. The main dish is enchildas, I need to bring a side dish. Can't think of anything. Spanish rice is already being brought.....What else can I bring???

Cornbread, Gazpacho, Guacamole/Chips, Mexican 3 bean salad, Fideo

Why don't you just bring some chips and dip. Tortilla chips and cheese and salsa dips.

Maybe a layered dish with refried beans, tomatoes, onions, black olives, cheddar cheese, salsa and sour cream. Don't forget the tortillas.

Bring some corn chips or salsa. Or if you want to, make some caesadeas (is that how you spell it?) and then chop them up up into thin slices.

Dessert? Sopaipillas, flan... Maybe some cerveza:-)

Plantains!!!! They are so good and easy to prepare.
4 yellow plantains
Vegetable oil, for frying
Kosher salt


Cut the ends off the plantains and cut them into 2 pieces. Peel them and slice them in half lengthwise. In a large skillet over medium-high heat add 1/4 cup oil and fry the plantains slowly until they are browned and caramelized, about 15 minutes. Drain on paper towels. Season with salt and serve.

Pico De Gallo, guacamole dip, Tostadas( Corn tortilla fried with beans spread on it then seasoned ground meat, lettuce, cheese, tomato on top). You could also bring an Agua to drink. Melon or Sandia would be good.
