How to give bland kimchee I bought a kick. NOT hot at all...?!
Answers: i have some indonesian spices at home, but don't know if it'll overlap w/ the kimchee I bought if i were to add something to it. It's as if the home-made kimchee sold at the local korean store just didn't have the regular amount of hot spices in it. sauce is there, looks the same, what should i add? I have sambal oelek (the jar w/ crushed red pepper paste and the rooster on it), but i don't think that'll blend well w/ the kimchee flavor. Something simple i can add to give it back its kick? thank you.

Cayenne pepper or tabasco. Or some finely diced fresh hot peppers.
ADD the Fresh garlic, and I mean tons of it, to bring out the flavor, this is the special ingredients koreans always add to there kim chee dishes, I add more too when i eat out, I always ask for fresh side garlic, Yes im a garlic Lover, also, some rock salt to your kimchee should help too, let this all marinate for some time, and check to your likings, oh, forgot, koreans add in the green onions to there kim chee too...Hope this help, aloha from hawaii
I would've thought a few crushed chilli flakes and cayenne pepper would both bring out the right flavours.
I'm not sure if adding tons of garlic would be spicy enough you could add some but cayenne is the hot stuff.
