Who knows how to make African Recipies???!


Question: There is a dish which sounds to me like benechin (don't know how to spell it but I hear it means 1 dish where everything is cooked together). It has spicy rice with meat and potatoes or what ever veggies they put in. Does anyone know how to make this or if you know of another African recipe, please share. Also, let me know exactly what type of rice is in there bc it seems like its a different rice. Thanks!!!!

It would depend upon which country your husband comes from (I'm assuming your husband is African, hence the reason to surprise him). Each country has it's own "national dish"...North African cuisine has a Middle Eastern influence and South African is more tribal mixed with Dutch and French.

This one is common in Kenya and many other nearby countries, like Uganda....

African Peanut Soup
Recipe courtesy Emeril Lagasse

2 tablespoons plus 1 teaspoon peanut oil, divided
1 tablespoon curry powder
2 medium onions, sliced (about 4 cups)
2 teaspoons minced garlic
2 large sweet potatoes (about 2 pounds), peeled and cut into chunks
2 cups low-sodium chicken broth
1 (28-ounce) can whole tomatoes, drained and quartered
1 pound ground turkey
1 teaspoon salt, divided
1/4 teaspoon black pepper
1/4 teaspoon cayenne
1/2 cup chunky peanut butter
1/2 cup coconut milk

Heat 2 tablespoons of peanut oil in a large Dutch oven or stockpot over medium-high heat. Add curry powder and cook, stirring constantly for 1 minute. Add onions and cook, stirring occasionally, for 2 minutes. Add garlic and cook for 1 more minute. Stir in sweet potatoes, chicken broth and tomatoes, and bring soup to a boil. Simmer, covered, 20 to 30 minutes.
In a large skillet, heat the remaining teaspoon of peanut oil. Add the turkey and cook, stirring with a wooden spoon to break up any clumps until cooked through. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Drain on paper towels.

Add cooked ground turkey, the remaining 1/2 teaspoon salt, cayenne, peanut butter, and coconut milk to the soup, stirring to combine. Bring mixture to a simmer and cook for 20 minutes.

I am not sure what part of Africa this recipe is from, but it's delicious

AFRICAN VEGETABLE STEW:

You could add your favorite meat to this dish for a complete meal (beef, lamb, mutton, chicken....)

(Serves 4)

1 very large onion,chopped
1 bunch Swiss chard
1 can garbanzo beans 500 g (known also as chick peas, ceci, etc.)
1/2 cup raisins 75 g
1/2 cup uncooked rice 100 g
several fresh tomatoes (or 1 large can 800 g of canned tomatoes)
1 clove garlic (or more to taste)
2 yams
salt and pepper to taste
1/2 tsp crushed red chili flakes, to taste (optional)
tabasco sauce to taste

METHOD:

Fry onion, garlic, and white stems of chard until barely limp. Add chopped greens and fry a bit.

Either peel the yams or scrub them well with a vegetable brush, then slice them into thick slices.

Add garbanzos, raisins, yams, tomatoes, chili flakes, salt, and pepper. Cook a couple of minutes. Make a well in the center of the mixture in the pot. Put the rice in the well and pat it down until it's wet. Cover and cook until rice is done (about 25 minutes or more). Serve with rice (any long grain rice will do).
