I'm going to give you a web site that has some chineese recipes, they are good and very simple to make, I think you will like them. You can adaprt them to the meat you want. I've tried most of them now, and they are quite simple and good.
My favorite is the bef broccolli.
Sorry there isnt an appetizer or soup recipe in them, only the main dishes.

1.Stir fry. ((((Take some chicken breast strip it heat a frying pan on high add some vegetable oil and a touch (TB)of sesame oil
add a small amount of chicken cook 1/2 way. add some frozen stir fry vegees cook until done (not mushy))))) this is the vegetable meat base for all three recipes... add stir fry sauce bottled or package mix. You need to make sure the frying pan is HOT and only add small amounts so it stays hot. continue to stir and fry the food. It will go fast. If you add too much food the pan will cool off and you will see excess water in the bottom of the pan. 2. For fried rice use the same method but skip the sauce. add one egg raw in the center of the pan scramble slightly so you have yellow and white egg. add warm rice and fry a little longer. add soy sauce and mix well to a light brown color.. 3. for egg foo young follow the same procedure. skip the sauce. remove the pan from the burner and turn low. mix 3 eggs with a little gran garlic parsley flakes & soy sauce to a light brown color.. pour egg batter into the cooked veg/chicken mixture. cook slowly until the egg begins to set. the egg need to be solid on the bottom. Tip the pan in different directions and lift the solids and let the egg run under the solids. when it is solid enough flip the whole mixture and cook the other side until the egg is all cooked. cover with sauce to serve. Simple chinese sauce... water chicken base soy sauce white wine or sherry heat and thicken with corn starch & water. spices to use in chinese cooking 5 spice garlic ginger pepper. there is much more but this is a start 3 simple recipes from the same base of ingredients. Also sesame oil will give you an authentic flavor. But be careful it is very strong and needs to be cut 4 to 1 with vegetable oil. you can of course use fresh vegetables bean sprouts bok choy pea pods mushrooms etc. it all depends on how much work you want to put into it and how many people are you feeding. If it is only for you buy the frozen vegies

Chinese food generally consists main dishes for sharing and served with steam rice. Try this:

Chinese mushroom and chicken soup
Stir fry tofu with mixed Asian Green
Pork strips stir fry with bamboo shoot

#Chinese mushroom and chicken soup
50gm Chinese dried mushroom -soak in hot water
1 whole Chicken - washed

1.Cook the chicken in cold water, as the water boils, skim off as much fat and impurity as you can.
2. Cut the mushroom in half and add to the soup.
3. Gently simmer the soup for one hour with lid on.
4. Season the soup at the end.

# Stir fry Tofu with Mixed Asian Green
2 cloves of garlic - crushed
1 pack of Deep Fried Tofu
Any Asian Green that you like

1. Chop the fried tofu into small pieces
2. Wash and cut the vegetables into small pieces
3. Heat some oil in the pan, cook the garlic until it started to turn colour
4. Add Vegetables and cook until cooked, add tofu, season it with (2)soy sauce, (2)oyster sauce and (1)sesame oil.
5. Serve.

#Pork Strips stir fry with bamboo shoots
300gm of pork (pork neck or shouder), cut into thin strips
1 tin 425gm of bamboo shoots strips
Green Onion - cut into pieces

1. Marinade pork strips in soy sauce, pepper, sesame oil and corn flour for at least 15 min.
2. Heat oil in the pan, add green onion, cook till aroma comes out
3. add pork to the pan, stir fry till cooked, then add bamboo shoots to the pan, cook for a further 2 min.
4. Serve.

These are some simple straightforward dishes, give it a try. :)

Scramble eggs, set aside. Stir fry onions, carrots, peppers. Add rice, fry more. Add eggs and frzn peas, fry 'til peas thaw, sauce, and enjoy. You can add more or less stuff, but thats basic fried rice there.
