Have you ever eaten japanese Noodles(' ' )?!


Question: When I was a chef I spent 9 months in Tokyo, Japan for CP hotels back in the 1980's, I used to go with my co-workers to the soba places for cold soba noodles, I love good udon in soup, they make fine chinese style noodles in Japan to, and have a number of dishes, some include eggs and noodles in an omelette style dish, very popular as a late night snack.

In Japan it is fine to slurp your noodles, in soba places you sit at a counter and fish them out of a bamboo trough like device as they float by, then you dip them in a flavour sauce, the fun is just trying to catch them with your chopsticks, alot of those type are available here fresh or dried, and are not much different than regular egg pastas, no real strange flavours, there are some made with green tea in the dough but those have a nutty taste just like regular soba. I have them in some capacity each week, here in Canada we have them in the grocery store around the fresh sushi bars.

No but i heard that they are horrible

I've never had true Japanense Udon noodles (instant doesn't really count) but I have had soba and didn't like it. Maybe it was the dipping sauce: a combination of soy and bonito flakes. It couldn't have been the cold temp since I eat Korean noodles cold all the time.

Japanese food uses a lot of subtle flavors: bonito, mirin, soy that I just don't find palatable. There are a few items that I love, such as sushi, but for the most part I'm drawn to oriental cuisine with a stronger flavor base: filipino, thai, korean.

Udon, yes, very good.

Yes, several different types, all delicious.
