Recipe for kashmiri pulao please....?!


Question: Recipe 1 :

Ingredients:



500gms Long Grain (Basmati) Rice
100gms Onion sliced vertically
5gms Cinnamon (dalchini)
5gms cardamom (Elaichi)
5gms cloves
a pinch of turmeric powder
1gm saffron (kesar)
10 ml Milk
20gms walnut
20gms cashew nut
1litre water
50gms oil
salt to taste

How to make kashmiri pulao:

* Wash and soak rice.
* Heat oil and fry onions till golden brown and remove.
* Fry whole spices, turmeric powder, add rice and sauté.
* Add half-saffron dissolved in little warm milk.
* Add hot water and mix well.
* Cook a little. Finish with remaining saffron and cook till grains are separated and done.
* Garnish kashmiri pulao with fried onions, walnuts & cashew nuts.


Recipe 2:

Ingredients
Kashmiri Pulao

* 500 gm: Basmati rice
* 2 cups: Milk
* ? cup: Cream
* 1 cup: Fruits (chopped, mixed)
* 1 tsp: Sugar
* 2 tsp: Ghee
* 3-4: Cloves
* 1-2: Bay leaf
* 1 inch long piece: Cinnamon
* 3-4: Cardamom
* ? tsp: Cumin seeds
* Rose water
* Salt to taste


Method

1. Gently wash rice and soak in water for about 10-15 minutes.
2. Heat ghee in a pan. Add cloves, cinnamon, cumin seeds, bay leaf and cardamoms. Now add soaked rice and fry for 2 minutes. Add the mixture of cream, milk, sugar and salt. Add half a cup of water. Bring to a boil. Cover and simmer till cooked. When cooked, mix in chopped mixed fruit.
3. Sprinkle few drops of rose water before serving.

Note : Before cooking, rinse the rice several times, until the water comes out clear. This removes any starch and residue, otherwise the rice may be sticky.

I love Kashmiri Pulao! This is my recipe:

Rice:

Basmati Rice – 1 cup
Salt – 1/2 teaspoon (to taste)
Sugar – 2 teaspoons
Saffron – ? teaspoon

Fresh Fruits:

Apple – 1 – chopped
Pomegranate – ? cup seeds – washed (Wash the seeds because the juice will stain the rice and other ingredients)

Dry Fruits:

Sliced Almonds – 2 tablespoons
Broken Cashews – 3 tablespoons
Raisins – 3 tablespoons

Vegetables:

Carrots – ? cup chopped
Green Peas – ? cup chopped
Yellow corn – ? cup

Others:

Cardamom – 4 to 5 pods
Ghee – 2 tablespoons
1/2 tsp sugar (to taste)

Method:

1. Cook rice with Saffron, Sugar and Salt and separate grains. Keep it aside in a large mixing bowl.

2. Boil water and add the vegetables. Cook until the vegetables are tender. Drain water and keep it aside.

3. Ghee fry the Dry fruits. Keep it aside.

4. To the rice, add the Cooked vegetables, Fresh Fruits, Ghee roasted Dry Fruits, Crushed Cardamom, Ghee & Sugar. Mix gently until all the ingredients are distributed evenly.

Serve warm or at room temperature.
