Chili chicken in chinese way please?!
Ingredients for chinese chilli chicken:
500 -600 gms Boneless Chicken
2 tbsp Soya Sauce
1 Egg
2 tbsp Corn Flour/Corn Starch
5-6 Chopped Green Chilies
2 Green Onion Chopped
1 tsp Garlic Paste
Salt to taste
1/2 tsp White Pepper Powder
1 tsp Sugar
A pinch of ajinomoto
2 cups chicken Broth/ Water
1 tbsp Oil
Oil to fry
Preparation:
* Cut the boneless chicken pieces into1 " cubes.
* Take 1tbsp. Soya sauce, 1tbsp. corn flour, salt, egg in a bowl and marinate chicken pieces in the the mixture for about 10-15 minutes.
* Heat oil and deep fry the marinated chicken pieces till golden brown.
* Now in a separate wok / kadhai heat 1 tbsp. oil and add garlic paste and green chilies and sauté for few seconds.
* Add 2 cups of chicken broth or water. Bring to boil and add sugar, pepper powder, salt , ajinomoto and remaining Soya sauce.
* Add fried chicken pieces to it and cook for few minutes.
* Dissolve the remaining corn flour in 1/2 cup water and add to the curry stirring constantly to avoid lumps.
* Cook for 2-3 minutes.
* Serve chinese chili chicken hot garnished with chopped green onion tops.
* Chinese chili chicken goes well with steamed / boiled rice.

- 1 lb, cut into small pcs Chicken
- 2 tbsp Corn Flour
- 2 tbsp All Purpose Flour
- 1 beaten Egg
- 1/2 tsp Salt
- 1/2 tsp Ground Black Pepper
- 1 large, sliced Onion
- 8 sliced, or as reqd. Green Chili
- 1/2 tsp, optional Red Chili Powder
- 2 tbsp Soya Sauce
- 2 tbsp Corn Flour
- 1 tsp Vinegar
- 1 cup Water
- 1/2 tsp, optional Ajinomoto
- to taste Salt
- 1/2 cup Cooking Oil
Instructions
1. Make the batter by mixing all the ingredients from corn flour to ground black pepper. Marinate the chicken pcs for 30 min.
2. Heat cooking oil in a wok or kadai. Deep fry the chicken pcs till golden brown. Keep aside.
3. In the same oil, add green chilies. Fry for a minute. Add sliced onions, and fry for 2 minutes in medium to high heat.
4. Add the fried chicken pcs, and fry for 5 minutes. Add red chili powder (optional).
5. In the meantime, prepare a sauce by mixing soya sauce, vinegar, corn flour in a cup of water. Mix properly.
6. Add the prepared sauce to the fried chicken and onions. Fry for few minutes, till the gravy thickens. Remove from heat. Serve with fried rice or noodles.

* 1 medium Onion
* ? Orange Bell Pepper (Shimla Mirch)
* 1 medium sized Chilli
* 2 cloves of Garlic (Lehsan)
* ? tsp. Ginger (Pisi Adrak) (grounded)
* 1 tbsp. Granulated Sugar
* ? tsp. Salt
* 200 ml. Vegetable Stock
* 1 tbsp. Dark Soy Sauce
* 1 tbsp. Sherry
* 1 ? tbsp. Chilli Sauce
* 1 tbsp. White Wine
* Vinegar (Sirka)
* 1 tbsp. Groundnut Oil
1) Roughly chop the onion and pepper. Finely chop the garlic. Slice the chicken. Cut the chilli in half, discard the seeds and chop.
2) Heat the oil in a large deep frying pan or wok, and add the garlic, onion, chopped chilli, pepper, chicken and ground ginger. Fry for about 5 minutes at a high heat.
3) Add the remaining ingredients to the pan, and continue cooking until most of the liquid has evaporated, and the chicken is cooked through (this should take 10 - 15 minutes).
4) Serve with Chinese Rice or noodles.
Tip: The fresh chilli can be left out if you do not want it too spicy. If you have fresh ginger, you can use some grated in place of the ground ginger.

Chicken Chili
Ingredients
- 375g chicken breast
- 4 to 5 green chilies
- 4 spring onions
- 1 white onion, medium
- 200 ml chicken stock (freshly made)
- 1 level tbsp. corn flour
- 3 tbsp Soya sauce
- 1\2 tsp. Chinese salt
- 1\2 tsp. table salt
-1\2 tsp. black pepper
-1\4 tsp. white pepper
1. Cut the chicken into 1 inch cubes. Mix together in a bowl 1 tbsp Soya sauce, 1\4 tsp. white pepper, and 1\4 tsp. Chinese salt. Marinate the chicken in this for about 30 minutes.
2 Cut the spring onions into 1 inch length. Cut the white onions into cubes. Wash the chili, core them, and cut the flesh lengthwise into thin strips
3. Mix the corn flour with a little stock to make a paste. Add 2 tbsp of Soya sauce, 1/2 tsp. black pepper, 1 tsp. of vinegar;1\2 tsp. of table salt, and 1\2 tsp. of Chinese salt to the stock and bring to boil. Mix the corn flour paste in the boiling stock in a thin stream, stirring all the time to make the thin sauce. Keep it hot.
4. Heat the oil in a wok and fry the chicken for 4 to 5 minutes or until the chicken is almost tender. Remove the chicken from the oil and keep aside.
5. Heat 2 tablespoons of oil and fry the onions, spring onions, and green chilli for 2 minutes over fierce heat, stirring all the time. Add chicken pieces and fry for a further minute.
6. Add the prepared sauce to the chicken mixture and stir it over high heat and then remove from the heat.
7. Serve with fried rice or noodles.
