The best sausage in the world has to be gills Sausage, there is no other sausage like it. Its made in the West Midlands and I buy it from the local butchers. I have no idea whats in it other than the sausage meat but its got a special flavour with a hint of sweetness. I love it on Sanwiches, with mash and gravy, in yorki pud... anywhere!!!
Sacked meats come form the oldest of the oldest peoples who have always stuffed cut meats in skins (usually intestines) for long term storage.

In any case I've eaten sacked (cased) meats for years in both Spain & Italy (and good chorizo from Portugal too).
