Where can I buy "dulce de tamarindo" in the Clear Lake area between Houston & Galveston?!
Answers: I want the real pulpa de tamarindo. You can get HUGE jars of tamarindo pulp candy (with seeds & all) in Mexico, but I have no idea where to get any here. Thanks in advance for any info.
I'm not from Texas, but I have a friend here in Washington State who actually MAKES her own. She buys several pounds of Tamarind pods at the Farmers' Market, then shells them and stews them for a few hours with piloncillo sugar, a pinch of salt, some cane syrup, and a little water so it won't scorch. I bet you could also do this in a slow cooker.
When it's to her liking, she lets everything cool, then runs everything through a food mill. She has a very large one she bought in Spain, but I have one I bought here in the US for under $40 and I use it for MANY things - I listed a website below for one. Anyway, the food mill presses out pulp and leaves behind the seeds and any stringy bits. Then she cooks the pulp down until it's a really thick consistency, spreads it out on waxpaper-lined jelly roll pans, and sets them in a cool dry place. In a few hours, she cuts everything into small squares, wraps each in plastic and sets them in her basement pantry.
I hope you find a REAL source for exactly what you want, but if you can't, I hope this recipe works for you :)
