Can someone give me a chile bean recipe?!
Answers: I am in love with Mexican food because I grew up in Southern California, I want to make some burritos, but the beans are always plain. I need to add flavor, and I love spicy food. So I thought of Chile beans, but they all had one ingrediant I didn't like, beef. I can't eat beef(Indian thing and all) plus it just plain tastes bad to me. Can someone please give me a good bean recipe, if it involves onions, ginger and garlic, can you try to give me one where they're so small that I can't taste them. I know I'm picky, but thats just me :)
Black Bean Chile
1 onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 jalapeno pepper, chopped (optional)
1 cup fresh cilantro, chopped
5 (14 1/2 ounce) cans southwestern tomatoes and green chilies
2 (14 1/2 ounce) cans black beans
1 (7 ounce) can diced green chilies
1 teaspoon oregano
1 teaspoon cumin
Saute onion and garlic in olive oil.
Add jalapeno pepper, if desired; this chile is spicy enough for most people without the jalapeno.
Combine all ingredients, except the cilantro, in a pot or crockpot.
Cook on low heat until the chile is warmed through.
Add cilantro about 15 minutes before serving.
Leftovers can be frozen and reheated later.
Red Bean Chili
* 2 teaspoons olive oil
* 1 large onion, chopped
* 3 garlic cloves, minced
* 1 (28-ounce) can diced tomatoes
* 2 (15 1/2 ounce) cans red kidney beans, rinsed and drained (I use 1 can drained pinto beans and 1 can drained red kidney beans)
* 2 large fresh bell peppers, chopped
* 2 tablespoons canned chopped green chiles
* 2 tablespoons taco or chili seasoning mix
* 1/2 teaspoon ground allspice
# Heat the oil in a nonstick Dutch oven over medium-high heat. Add the onion and galic and cook, stirring frequently, until golden, 7-10 minutes.
# Add tomatoes, beans, bell peppers, chiles, seasoning mix, and allspice; bring to a boil. Reduce the heat and simmer, uncovered, stirring occasionally until the chili is thickened, about 30 minutes.
