Can this substitute for dried ancho chiles?!


Question: Can I substitute ancho chile powder for dried ancho chiles? I just got back from the market and thought I had enough, otherwise I would have bought some. I'm just a few chiles short.

Yes. Assuming the recipe calls for pureeing the peppers. I assume this is the case since you are using dried peppers. Just make sure you have Chile powder (pure ground ) and not Chili powder (a mix of spices)

Yes, but the results will be slightly different. Some chili powders have cumin or other spices in them, but these would probably compliment the flavors in your dish. And if the recipe calls for reconstituting and removing the peels from the dried peppers, resulting in a soft pulp, then the texture of your dish may differ. But it will be close enough.

As long as what you have is labeled "chile" with an E on the end rather than "chili powder" then you can substitute it for whole ancho chile just fine. You'll often find it in bags labeled as New Mexico Chile. Santa brought me 4 whole pounds!
