Bánh mì - help please with cooking.?!


Question: Banh Mi Thit (Bánh mì k?p th?t) Vietnamese baguette, French bread containing paté, Vietnamese mayo, different selections of Vietnamese cold cuts and deli (a large variety, most commonly with ham, head cheese, and a Vietnamese bologna), pickled daikon and carrot, cucumber slices. Often garnished with coriander, black pepper. This food is common everywhere in Vietnam as a favorite of factory workers and school kids and eaten for any meal of the day, commonly breakfast and lunch. There are a wide variety of banh mi (with different meats) and many shops have popped up across North America serving primarily Banh mi.

MY QUESTION IS:
I want to know if anyone knows how to prepare the carrot that is used in these rolls sold in bakery shops in australia. I know they do something other than grate it because tastes so much better than just grated carrot.

Also the special butter they use how do you make it? Could I please have the recipie to make the butter/mayo?

the carrots are sliced & then pickled ;]

the butter is a combination of mayo , oil , butter , and garlic flavor :)

sorry i cant help with the answer, but if it was me i would try and find a forum where there are real chefs on there and you ask questions and people answer, pretty much like this.

carrot:
bring to boil - 1/2 cup water, 1/4 cup sugar, 1/4 cup distilled vinegar, cool and add 1/2 cup carrot. marinate for 30mins or leave overnight in refrigerator

Mayo: not too sure, but think its egg yolk, oil and something else..... sorry maybe someone else out there has this answer.
