Anyone know how to make Egusi stew?!

First you need to hunt the elusive Egusi. Once you have hunted and bagged your Egusi (each Egusi will be able to serve two people), then you need to cut it up into small pieces (not too small as it will cook down). Leave the skin on.

Let it simmer in plain water for 2 hours (the Egusi will turn the water red and add the flavoring). After it is done simmering you will need to add your greens (any type will do, collard, spinach, etc). Cook for another 1/2 hour over high heat (stirring constantly), then top with cheese. It is good as a stew or poured over the top of biscuits!
