How do you cook black eyed beans?
Answer: Actually they are black eyed peas not beans. Cooking instructions: soak in water at room temperature over night. Drain the water off and add fresh water, salt and bring to a boil and turn the temperature down to a slight boil until soft. I prefer bacon grease in a small amount added before cooking to add flavor. Do not cook dry or over cook. Pepper sauce is an excellent condiment for black eyed peas.

thank you, 20 to 30 minutes, that's fast, and should I soak them the night before or just put them in dry?
Answer: Soak over night per instructions above. Good luck.

You may have cooked them on high heat. Boiling vigorously tends to tear away the skins. Turn the stove to its lowest simmer once the water and beans start boiling. I have also learned from professionals that a bit of celery (or parsley) and a couple of teaspoons of molasses keep the skin from bursting.
