1. Proper ingredients and/or high quality restaurants are not readily available, and so,
2. It's not as interesting to people to try to cook or it's out of sight and therefore out of mind for a meal outing.
I had an Iranian neighbor for some years and very much enjoyed the foods he and his wife prepared. I especially liked the way they used yogurt throughout some of the meals. It is something that I have brought into my way of eating certain foods that I now prepare.
People have never tasted it maybe because there aren't many Persian restaurants or because they are too Republican.
I agree that Persian food is very tasty. My children went to a Persian babysitter/pre-school when they were young, and they immediately loved the "crunchy rice" made with lima beans that they served.
We have many Persians and a few Persian restaurants in the San Jose, Calif., area. Middle eastern markets seem to have all the ingredients needed to cook at home, too.
While I like the food very much, I've found that some neighboring countries' cuisines is typically more varied ... at least in restaurants. Afghan, in particular, is a very wonderfully tasting "crossroads" cuisine that includes many elements found in Persian food, but also much much more.
In many parts of the United States, diners are not very adventurous, sad to say. So those people are not likely to try an unfamiliar Persian food. If you are asking because you have a restaurant, you might try to popularize your food by sponsoring a booth at a local festival, for example, and serve tasty kebabs and rice etc. for a reasonable price. That could be a good way to spread the word ... and great tastes of Iran.
