cut chicken in to 1 in chunks and mix a bowl of pancake batter thick. heat oil to hight temp. dip peices into the batter then slide into the oil and cook till golden brown. i usually buy sweet and sour sause, it is to difficult to make.

3 boneless skinless chicken breast cut unto cubes
1 8-10 oz bottle sweet and sour sauce
1 green pepper cut into chunks
1 onion cut into chunks
1 can drained pineapple chunks
white rice, i use minute rice

Cook chicken in a large saute pan, with a little oil until nearly done.
Add pepper, onion and sauce and simmer until veggies are tender crisp. then add pineapple until heated.
Serve over white rice.

INGREDIENTS
1 (8 ounce) can pineapple chunks, drained
2 green bell pepper, cut into 1 inch pieces
1/4 cup cornstarch
1 3/4 cups water
3/4 cup white sugar
1/2 cup distilled white vinegar
2 drops orange food color
8 skinless, boneless chicken breast halves - cut into 1 inch cubes
2 1/4 cups self-rising flour
2 tablespoons vegetable oil
2 tablespoons cornstarch
1/2 teaspoon salt
1/4 teaspoon ground white pepper
1 egg
2 cups water
1 quart vegetable oil for frying


DIRECTIONS
In a saucepan, combine 1 1/2 cups water, sugar, vinegar, reserved pineapple syrup, and orange food coloring. Heat to boiling. Turn off heat. Combine 1/4 cup cornstarch and 1/4 cup water; slowly stir into saucepan. Continue stirring until mixture thickens.
Combine flour, 2 tablespoons oil, 2 tablespoons cornstarch, salt, white pepper, and egg. Add 1 1/2 cups water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces, and stir until chicken is well coated.
Heat oil in skillet or wok to 360 degrees F (180 degrees C). Fry chicken pieces in hot oil until golden. Remove chicken, and drain on paper towels.
When ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. Pour hot sweet and sour sauce over top.

SWEET & SOUR CHICKEN

3 boneless skinless chicken breast
sesame seeds (optional)
1 green bell pepper (julienned)
1 clove of garlic (chopped)
2 1/2 tbsp. of coconut oil
1 jar of La Choy sweet and sour sauce

Cube chicken into desired chuncks; set aside. Heat oil until melted over low heat. Add sesame seeds and chopped garlic, stir to mix together, turn up heat to med-hi, and add chicken.
Stir fry until chicken is thoroughly cooked, then add bell pepper and sweet and sour sauce. Stir and turn down heat to low.

Cover and simmer for about 10 minutes until bell pepper is soft and tender.

This is as good as it gets, try it youll dig it.

Sweet And Sour Chicken

1 lb boned chicken breasts, cut in strips
2 tbsp oil
1 cup bell pepper strips
1 cup carrot strips
1 garlic clove, minced
1 1/4 cups chicken broth
1 can pineapple chucks with juice
1/4 cup soy sauce
3 tbsp brown sugar
3 tbsp vinegar
2 tbsp cooking sherry
1/2 tsp ground ginger
1 1/2 cups instant rice
Procedures
1 Cook and stir the chicken in hot oil til light brown
2 Add pepper, carrot and garlic and cook about 2 minutes
3 Add broth, pineapple and juice, soy sauce, brown sugar, sherry and ginger
4 Bring to boiling
5 Stir in rice
6 Remove cover and let stand about 5 minutes
7 Fluff with fork

Sweet And Sour Sauce For Chicken Or Ribs

SAUCE:
1 cup white vinegar
1 cup granulated sugar
1/2 cup frozen pineapple juice, concentrated
2 tsp Accent
1/2 cup ketchup
4 tsp soy sauce
1 tsp seasoning salt
1 tsp garlic powder
1/4 cup cold water
2 1/2 tsp cornstarch or tapioca starch
CHICKEN:
2 large eggs, beaten
4 tbsp whole milk, homogenized
3 lbs chicken pieces, skin removed
1/2 cup all-purpose flour
1/4 tsp black pepper
1/4 tsp seasoning salt
1/2 cup olive oil
Procedures
1 SAUCE:
2 In medium size pot, add white vinegar, granulated sugar and bring to boil, stirring frequently.
3 Add pineapple juice, Accent, ketchup, soy sauce, seasoning salt, garlic powder and bring to boil; stir until blended.
4 If desired, 3 or 4 drops of red food coloring can be used in sauce to add color.
5 Mix together cold water and cornstarch until dissolved.
6 While sugar mixture is boiling, add cornstarch mixture slowly, stirring continuously until mixture thickens slightly. Do not add cornstarch mixture all at once as the sauce could get very thick.
7 Pour mixture over prepared chicken or pork spareribs or use as a dip for chicken pieces.
8 PREPARATION OF CHICKEN:
9 Preheat oven to 375°F.
10 In medium size bowl, beat 2 eggs with milk.
11 Into a plastic bag, add flour, black pepper, seasoning salt and shake well.
12 Cut up chicken to desired size pieces.
13 Firstly, dip chicken into egg mixture then place into bag with the flour and shake well; repeat until all chicken is coated.
14 In a large frying pan, add 1/2 cup of olive oil and fry chicken until golden brown on all sides. Place chicken in an oven proof 9''x12'' baking dish.
15 Pour sauce over chicken.
16 Bake in preheated 375°F oven for about 45 minutes, turning and basting every 15 minutes.
17 Do not overcook chicken as it will start to dry.
18 PREPARATION OF PORK SPARERIBS:
19 If ribs are purchased with membrane, strip membrane from back side of ribs.
20 Prepare spareribs as outlined above for chicken.
21 UNCLE BILL'S TIPS: You can substitute 1 - 19 oz. can of pineapple chunks in unsweetened pineapple juice for the frozen pineapple juice. This will give you pineapple style chicken or spareribs.
