Recipe for Spaghetti Pie/Bake... No sauce...see details?!


Question: My family always had this at family functions and I never got the recipe. All you Italians out there.... maybe you have an idea. It was like plain spaghetti baked in a dish... I think it had parmigiano mixed in but wasn't very cheesy. It also had no add in's like meat, veggies or sauce. Help!!?? I love the stuff and would love to make it again.

BAKED PASTA WITH BASIL AND PARMESAN
CHEESE

1 (16 oz.) pkg. cappellini (angel hair) pasta
4 tbsp. (1/2 stick) butter
6 lg. cloves garlic, minced
4 eggs
1 1/2 c. half & half
1 c. very coarsely chopped fresh basil (about 1 oz.)
1 1/2 c. grated Parmesan cheese (about 6 oz.), divided
Salt & pepper to taste

Lightly butter a 9 x 13 inch baking pan. Cook cappellini until barely tender to the bite (al dente). Drain, rinse with cold water; drain again and place in a large bowl. Meanwhile, melt butter, stir in garlic. Pour over pasta and toss well. In a medium bowl, whisk eggs and half and half until foamy. Stir in basil, 1 cup Parmesan cheese, salt and pepper to taste. Pour over pasta, tossing until well distributed. Pour into prepared pan; sprinkle top with remaining 1 1/2 cups cheese. Preheat oven to 325 degrees. Bake, covered, for 30 to 35 minutes or until set. Remove from oven and let rest 10 minutes before serving. Cut into squares to serve.
Serves 8-10.

BAKED PASTA IN WHITE SAUCE
Pasta al forno in bianco
Preparation - Medium
Serves 4 - 6

For the sauce

2 T unsalted butter
3 T flour
1/8 t nutmeg
salt and freshly ground white pepper
2 cups milk heated

For the pasta

1 cup grated cheese: Parmesan, Pecorino, Cheddar, BelPaese, Swiss
1/4 cup butter
salt and pepper
l4 oz short pasta (penne, ditali, maccheroni, ziti, mostaccioli, etc)

FOR THE SAUCE:
HEAT milk the milk in a saucepan or in the microwave and keep hot.
MELT the butter in a saucepan over very low heat till liquified and just bubbling.
REMOVE from heat making sure butter does not turn brown or burn.
ADD the 1 T of flour to the butter, stirring constantly with a wooden spoon till smooth - then slowly add the rest of the flour and stir till smooth.
RETURN to medium heat and add 1/4 cup of milk at a time. When milk is absorbed by the butter-flour mixture, add a little more increasing quantities as you go along.
ADD nutmeg, salt and pepper to taste and continue stirring with the sauce at a slow bubble till sauce has the consistency of heavy cream.
REMOVE from heat and keep warm until ready to use.

FOR THE PASTA:
PREHEAT oven to 400 degrees F. with baking rack 1/3 - 1/2 up from bottom.
COOK the pasta in about 6 quarts of boiling, salted water (about ten minutes).
RETURN the sauce to low heat and add the grated cheese, stirring until cheese is absorbed into the sauce.
DRAIN the pasta, pour out the pasta water, return the pasta to the pot. Pour in three-quarters of the sauce and mix it together very thoroughly.
GREASE a large ovenproof dish with half the butter (or a t of olive oil), pour in the pasta, distributing it evenly in the dish. Pour over the remaining sauce and dot the top with butter.
BAKE in a preheated 400 oven for 20 minutes until bubbling and golden on top. Remove, rest for 5 minutes and then serve.

INGREDIENTS
8 ounces spaghetti
1/3 cup unsalted butter
1 (8 ounce) container sour cream
1 teaspoon lemon zest
3 tablespoons fresh lemon juice
3 tablespoons chopped fresh parsley
1/4 cup grated Parmesan cheese
salt and ground black pepper to taste

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Cook spaghetti according to package directions until al dente. Drain and place spaghetti in a greased 1.5 quart casserole dish.
Melt butter in medium saucepan over low heat. Remove from heat, and stir in sour cream, lemon peel, and lemon juice. Mix until smooth. Pour mixture over spaghetti in casserole dish. Mix well
Bake 15 to 20 minutes in the preheated oven, or until heated through. Remove from oven, and add grated Parmesan cheese and parsley. Season with salt and freshly ground pepper to taste. Serve immediately.
