Banana Lumpia! with jackfruit

I just made this yesterday as a matter of fact, and it's so easy.

Here is everything you will need:

Lumpia Wrappers (Springroll wraps)
Bananas
Strips of Jackfruit
Brown sugar (or you can use sugar and cinammon, this is what i use)


To cook, first heat a pot of oil on medium level. While the oil is heating, take the bananas, and first cut it in half then cut each half down the middle, so that you have 4 long strips of banana. Take a lumpia wrapper, and sprinkle a tbsp of cinnamon on the bottom of the wrapper (the closest to you) but dont put it along the end of the wrapper, just a little bit below the middle of the lumpia. Then place a banana on top of the cinnamon with the flat side of the banana facing up, then add a strip of jackfruit on top. sprinkle a tbsp of sugar on top of the jackfruit. Now take the side closest to you that has all of the ingredients, and begin to roll it foward, when you have wrapped it about half way, take both side of the wrapper and fold it like an envelope, then finish wrapping, and use water or oil to seal it. Then when the oil is hot, fry them until light golden brown. They taste best when you eat them warm!



This recipe is amazing and doesn't take long at all. Sorry if my directions were difficult. If you search Banana Lumpia on google, you will find easier directions if you couldn't understand mind.

1/4 cup vegetable oil
1/2 tsp cumin seeds
2 onions, chopped
1 fresh red chili, seeded and chopped finely
1/4 tsp turmeric
1 small, firm jackfruit, quartered, seeded,and chopped coarsely
1/4 cup toasted, flaked coconut
1/2 lemon, quartered, to serve

SERVES 2

Heat the oil in a large skillet, and sauté the cumin seeds until browned. Add the onion, chili, and turmeric, and sauté for 2-3 minutes more. Stir in the chopped jackfruit, and sauté until tender. Stir in the coconut, and serve hot, with lemon juice squeezed over top.

Jackfruit Casserole

2 eggs
1 cup mayonnaise
1 can cream of mushroom soup
1 cup cheddar cheese, grated
1 teaspoon onions, minced
2 cups green jackfruit (cooked)

1. Preheat oven to 450°F.
2. In a medium bowl, beat eggs.
3. Blend in mayonnaise and cream of mushroom soup.
4. Stir in cheese, minced onion and jackfruit.
5. Turn into a 2 quart casserole.
6. Bake for 45 minutes.

That banana lumpia is properly called Turon in the Philippines, although it uses lumpia wrappers. Fresh ripe jackfruit is great to boil in a light syrup, andwill keep in the fridge a long time. Use it to top ice cream and jello. The unripe green jackfruit is cooked in coconut cream, shrimp, garlic, onion, ginger and chili.

SPICY JACKFRUIT STIR FRY

Ingredients:

1 can of green jackfruit pieces (use fresh if available!)
1 inch piece of ginger, peeled and finely minced
1 clove of garlic, finely minced
2-3 fresh small Thai green chilies, halved lengthwise
1 cup of green peas (frozen are fine)
? tsp turmeric
? tsp ground coriander
? tsp red chili powder
? tsp kala or goda masala (or use garam masala)
1 tsp ground cumin
salt to taste
juice of ? lime
1 tsp black mustard seeds
pinch of asafetida (hing)
3-4 fresh curry leaves
2 tbsp oil (vegetable or canola)
freshly chopped cilantro leaves for garnish

METHOD:

Drain the jackfruit, rinse well, drain again and set aside until needed. In a large karahi or wok on medium high heat, add the oil. When hot, carefully add the mustard seeds. When the splattering stops, add the ginger, garlic, green chilies, asafetida and curry leaves. Add the jackfruit pieces and gently stir, be careful not to break them up. Add the spices (turmeric, ground coriander, ground cumin, red chili powder, kala or garam masala and salt). Stir gently to combine and add the green peas. Reduce the heat, cover and let simmer or 4-5 minutes. Add the lime juice and garnish with freshly chopped cilantro leaves. Serve with hot chapathis and fragrant Basmati rice.
