I tried this new sweet and sour sauce recipe it seems to be missing or need more of something?!


Question: containing these ingredients
4 cups of ketchup
1/2 cup water
2 tbsp worchestershire
1 tbsp soy sauce
1 cup white sugar
1/4 cup white vinegar
2 tbsp Black pepper
and 2 tbsp pineapple juice
it's okay but doesn't taste quite right, any ideas on how to maybe fix it better?

Your recipe is missing garlic. I would cut down on the ketchup to 2 1/2 cups, because that might be the only thing that you are tasting. I'd omit the water and replace the quantity with the pineapple juice. I'd also use brown sugar instead of white sugar for a deeper carmel flavor. Be sure to cook the sauce to bring out the sugar in the ketchup.

believe it or not, when i work for a chinese restaurant, their sweet and sour sauce is made of: catchup, vinegar, sugar: 1:1:1, that's it...

Thinly sliced or slivered fresh ginger. No decent Chinese sweet and sour sauce should be without it. And a dash of sesame oil on the dish before serving.

For a Thai style sweet and sour
1tbls white vinager
4 tbls sugar
1tbls fish sauce
2tbls soy
1/2 cup catsup (yep catsup)
1/2 cup chilie sauce (like a combo of catsup and hot sauce)
1tsp salt
add fresh pineapple, onion, garlic,cucumber,green onion, fresh ginger, carrots, a large green Thai chilie
then pork. shrimp,beef or chicken
