Here's a partial list of herbs and spices commonly used in a variety of foods from the Mediteranean basin. I'm sure I've inadvertently left out a few.

garlic, bay leaf, basil, aniseed, cinnamon, capers, thyme, cardamom, cloves, saffron, coriander, cumin, tarragon, chives, fennel, juniper berries, paprika, mace, mint, cilantro, mustard, nutmeg, oregano, white and black pepper, chili peppers, parsley, shallot, purslane, rosemary, sage, sesame seeds, ginger, marjoram

Some popularly used spices in the Mediterranean are annatto, cumin, saffron, rosemary, spicy paprika, oregano, sweet paprika.

Garlic, genger seasonal spices in season. Make sure everything is fresh and in season. Try bell peppers and vandalia onions also, there wonderful and healthy for you.
