Chow mein noodles?!


Question: ive had chow mein noodles from chinese restaraunts before, and they have a mixture of soft and crispy noodles. so im kind of confused on how to make them...i bought the crispy kinds today but can someone tell me what kind i need for the softer ones...are they called chow mein noodles or something else?

Yea the softer ones are called chow mein noodles, they are the same kind of noodle used to make Chinese noodles soup. (different cooking methods) You should be able to get those in an Asian supermarket. put them in hot water and boil for about less than a minute and wait until they dry then you can make fried noodles (Chow mein) with other ingredients (veggies, seafood, etc.)The crispy kinds are more of a snack, a mixture of both noodles does make it pretty tasty.

Chow means fried (chow fan means fried rice) while mien means noodles. It is difficult to tell you how to prepare what you had at a restaurant, because chow mien is generic for any stir-fried noodles. Some crispy noodles are made by deepfrying for a few seconds the kind of noodles made from mung beans (in some areas it is marketted as Lungkow vermicelli). The sauce of stir-fried veggies, meats, shrimp, etc, with a thick gravy, is poured over the crispy noodles.

go buy "farkay" brand
dunk in boiling water 1to 2 minutes,rinse in cold water
fry in peanut oil,garlic,ginger,some soya based sauce.

The softer noodles are called egg noodles. They are yellow in colour and are thick like spaghetti but longer in length.
