Why the bulghar in Tabhuli?!


Question: I am on a carb restricted diet and I love Tabuhuli but I always have to make it myself because of the wheat they add. I never taste the wheat when I eat it, what is the purpose of adding it?

The Tabhuli is a Lebanese meal originally, consist, mainly, mixture of minced fresh vegetables, with some added Olive oil. the burgle (not bulghar) is added for 2 reasons (A) to add protean and hydrocarporates (b) taste.
The Tabhuli is consider a complete healthy meal of great value and low calories. It also help the digestive system and prevent cancer

Bulgar a.k.a. cracked wheat is always in tabouli. The amount used may vary depending on who prepares it. I have had it with a small amount and when it has been the predominant ingredient.

To fulfill the ages-old recipe so that we can call it tabbouleh. Otherwise it would be (and be called) something else.

That is like asking why there is chicken in Fried Chicken. No bulgur, no tabouleh!
