Being Indian myself, I can tell you very little to none of the sauces in Indian food are thickened by corn starch or flour.

North Indian curries are usually thickened with yogurt or potatoes are added to the curry which are a natural starch that thickens during cooking.

South Indian curries which are more spicy tend to be more vegetarian and again are thickened by the natural starches in the vegetables.

If you're going carb free, then just leave out potatoes in the dish. Thicken with yogurt. You can also just reduce them over the stove for a longer period of time to allow the moisture to evapourate.

The tough thing for you is what to eat these dishes with?

not sure

uuhhh...

Curry chicken, lentils, chicken tandoori.

true indian dishes doesnt have much flour n corn starch in it...
i think ur not getting the real stuff...
chinese dishes are the one using much corn flour in the sauces..
well, if ur talking abt paratha, chapatti...then yes,it's made using flour.

Hmm, I'm of Indian origin and I know a bit about Indian food. But I can't think of any recipe which uses corn starch... I'm sure most of them don't. You might see whipped cream on the list of ingredients. You can substitute it with low fat cream or even a can of cream of mushroom or low fat yoghurt. And for the flour, unless you're making naans or samosas, you don't need it. Also, you can cut down on the fat that you put in the food if you cook in non-stick pots! Hope this helps.

I tried Dal Makhani yesterday, very spicy though .. but you may need to eat this with rice. May be you can also reduce the amount of butter and cream ..

My husband is on the low carb plan. We eat the curries and instead of the rice or flatbreads we eat veggies and Quinoa.

Eat vegetable korma or vindaloo. Indian dishes are so intensely flavored I find it difficult to eat without taming the main course by eating bread or rice.

Unfortunately, I don't have knowledge on the diet Indian food, but I have an Indian colleague of mine who is, I will address the question and will get back to you with an ideal answer,
