Spicy Beef and Broccoli Salad with Kimchi

1 tablespoon sesame seeds
3 cups water
3/4 pound broccoli, cut into 1-inch florets, stalks peeled and sliced
1/2 inch thick
1 pound trimmed beef rib eye, sliced 1/4 inch thick,or try chicken
Salt and freshly ground pepper
1 tablespoon soy sauce
1 tablespoon unseasoned rice vinegar
1 teaspoon Asian sesame oil
3/4 cup thinly sliced kimchi

In a small skillet, toast the sesame seeds over moderate heat until
fragrant, about 2 minutes. Transfer the sesame seeds to a plate to cool.

In a medium saucepan, bring the water to a boil. Add the broccoli
florets and stems and cook until they are bright green, about 2
minutes. Using a slotted spoon, transfer the broccoli to a colander and
refresh under cold water. Pat the broccoli dry with paper towels.
Add the sliced rib eye to the boiling water and cook until medium rare,
about 40 seconds. Using a slotted spoon, transfer the beef to a plate.
Spread the slices in an even layer and season them with salt and pepper.

In a large bowl, combine 3 tablespoons of the cooking water with the
soy sauce, rice vinegar and sesame oil. Add the broccoli, sliced beef,
kimchi and sesame seeds to the bowl and toss the salad well. Serve the
beef and broccoli salad at once.

Kimchi, added here for heat, is a Korean condiment that is also
commonly eaten in Japan. Kimchi is made from many vegetables, but
brined napa cabbage with hot red peppers and garlic is the most
familiar. Kimchi is sold at many supermarkets and Asian food shops.

WIth other balanced foods, yes.

You cant possbily eat kimchi on its own, so balance it with other foods.

Kimchi provides a lot of fibers and vitamin c, but is high in sodium. Balance it with plain rice and broiled fish or any lean meat, and for a feeling of fullness, a broth-based soup.

I like it in fried rice!

KIM CHEE FRIED RICE:
1 tablespoon vegetable oil
1/4 pound pork, cut into fine shreds (may substitute diced Spam)
4 cups cooked rice (see note)
2 cups chopped kim chee, rinsed and drained
Salt and pepper to taste, optional

Heat oil and stir-fry pork. Add kim chee and stir-fry 3 minutes, adding salt and pepper if desired. Add rice and toss well until heated through. Serves 6.

Note: Rice should be prepared drier than usual; cook with less water.

Kimchi may be relatively healthy for you, but you need to know that if you eat enough of it, it will come out of your sweat pores, for days! You will not be able to shower it off, or get it out of your mouth and throat with mouthwash.

Kimchi IS a nice thing to have to put bulk in a meal without eating something fattening. I used to live right next door to a Korean restaurant called "Seoul" (a hole in the wall with the best Korean food in town) which was right next to a Burger King. I was in college at the time so I didn't have much money. I'd buy a Whopper and then get some kimchi instead of fries and then go home and eat. They were a delicious combination.
